All In Veggies

Sometimes when I shop I just load up the cart with all the veggies I see.  I try to get as many different colored fruits and vegetables that I can find.  The reason being so we make sure we are getting all the different vitamins and nutrients that we need.  This particular recipe came about just that way.  I do a bunch of variations on the concept of this dish based on what I have in the fridge.  It's super quick easy and filled with so many great things.........

1 Tblsp of Olive Oil
1 Onion Chopped
4 or 5 different colored potatoes, red, purple, gold, etc. Chopped
1 cup of chopped green beans
1 Bell Pepper Chopped
1 1/2 cups of different colored cherry tomatoes Halved
1 Can Garbanzo Beans
3 Garlic Cloves Minced
Feta Cheese
Salt and Balsamic Vinegar to Taste

1. Saute the onion in the olive oil until it begins to carmelize about minutes.  Add a little bit of balsamic to coat.
2. While that is happening chop your potatoes...I do it this way so things are still happening while the onions cook.  I put everything in the order of needing more or less cooking time.
3. After Potatoes are added chop your green beans.  After Potatoes begin to brown a bit add in your green beans.
4. Cut your bell pepper and when finished add that.
5. Add in Garlic
6. After adding bell pepper chop tomatoes and add them as well as the garbanzo beans.
7.  Add small amounts of balsamic at a time.  Continue to stir.  I add the balsamic by taste rather than measurement, and do the salt the same way.
8.  The entire dish should be cooking about 20-25 mins total.
9.  After cooked place in bowls and top with some feta cheese.
