Healthy Pancakes & Yummy....What???


I woke up this morning and decided there had to be such thing as healthy pancakes.  Pure loves pancakes, and with all of the carbs from the pancakes and all of the syrup, they tend to not start the day off too healthy.  I figured adding more fiber, and more protein would make the pancakes more of what they needed to be.  I decided to add hemp protein powder which is not only filled with protein, but tons of fiber as well.  I also added plain yogurt to make them moist, and give a little probiotic boost to help with digestion as well, most of which is lost in the cooking but good none the less.   So here is the  recipe, and they were definitely a hit.

Ingredients:

1/3 cup of plain yogurt
1/3 cup of water
1 Large Egg
1 Tblsp. Melted Coconut Oil
9 Tblsp. whole wheat flour
3 Tblsp. Hemp Protein Powder
1 tsp. vanilla extract
1 tsp. sugar
1 tsp. baking soda
a dash of salt

Directions:

Mix all the ingredients together in a bowl.  Lightly oil the pan with coconut oil.  Dollop whatever size pancakes you prefer into the pan.  This recipe yielded 8 medium size pancakes.

Next time I am going to try adding blueberries or bananas into the mix.  Get creative with it.  I think this recipe would definitely be great with some fruit added to it.
